This is a creative take on an Americanized breakfast delight. The recipe blends tradition with indulgence, creating a waffle that is light, crisp, and perfumed with Mediterranean sunshine. No butter—just pure, liquid gold.
Ingredients
- 2 large eggs
- 1 ½ cups whole milk (or almond milk for a lighter touch)
- ¼ cup Ciccio’s Olives Original EVOO
- 2 tbsp honey (or sugar if you prefer)
- 1 ¾ cups all-purpose flour (or half whole wheat for a rustic touch)
- 1 tsp sea salt
- 1 ½ tsp baking powder
- ½ tsp baking soda
- Zest of 1 lemon (for brightness)
- 1 tsp vanilla extract
Directions
- Prepare the Batter
- In a bowl, whisk together eggs, milk, olive oil, honey, lemon zest, and vanilla.
- In another bowl, sift together flour, salt, baking powder, and baking soda.
- Gently fold the dry ingredients into the wet mixture. Don’t overmix—airy waffles need a light hand!
- Cook to Perfection
- Heat your waffle iron and lightly brush it with olive oil.
- Pour in a ladle of batter and cook until golden and crisp.
