This is a creative take on an Americanized breakfast delight. The recipe blends tradition with indulgence, creating a waffle that is light, crisp, and perfumed with Mediterranean sunshine. No butter—just pure, liquid gold.

Ingredients

  • 2 large eggs
  • 1 ½ cups whole milk (or almond milk for a lighter touch)
  • ¼ cup Ciccio’s Olives Original EVOO
  • 2 tbsp honey (or sugar if you prefer)
  • 1 ¾ cups all-purpose flour (or half whole wheat for a rustic touch)
  • 1 tsp sea salt
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • Zest of 1 lemon (for brightness)
  • 1 tsp vanilla extract

Directions

  1. Prepare the Batter
    • In a bowl, whisk together eggs, milk, olive oil, honey, lemon zest, and vanilla.
    • In another bowl, sift together flour, salt, baking powder, and baking soda.
    • Gently fold the dry ingredients into the wet mixture. Don’t overmix—airy waffles need a light hand!
  2. Cook to Perfection
    • Heat your waffle iron and lightly brush it with olive oil.
    • Pour in a ladle of batter and cook until golden and crisp.
  3. Serve with Love
    • Drizzle with more olive oil and a touch of warm fig honey (we love our Kellerlands one!)
    • Top with compote made your way (we suggest mashing fresh lemon, blueberry, and maple syrup together!)
